Chef Lolo

Born and Raised in Nice, France

Growing up in a family of musicians, I always dreamed of New York and the United States. My love for cooking began in the kitchen of my adoptive grandmother, Mémé Olivier, a true Niçoise from many generations. She taught me how to select the freshest fruits and vegetables at the market, the secrets of preparing traditional Niçoise dishes, and even how to set the table and wash the dishes. Her guidance shaped my passion for food, and I am forever grateful for everything she did for me.

Later, I attended culinary school in Menton, where I graduated with honors. While I also pursued my love for music, my journey eventually led me to work in restaurants in Nice. Along the way, I explored my love for fashion and design, working in the luxury clothing business in Monaco. Through it all, I realized my greatest passion: connecting with people.

In 2008, I opened my first restaurant, Pâtes et Traditions, with my family. It became the #1 French restaurant in Brooklyn for 15 years (according to Yelp and Foursquare). Following this, I created the iconic Santos Anne, a fusion restaurant featuring live music five days a week, a beautiful garden, and a bar. I also collaborated with Richard Bona to build the concept for Bonafide, a vibrant club.

My journey continued with contributions to the design of La Petite Joie in Brooklyn and the creation of La Sandwicherie NYC, a food cart concept in partnership with Massire Diawara. This led to the design of three successful sandwich shops.

Today, I am thrilled to present a restaurant that truly represents me, my journey, and my soul: Maison Provence.

Maison Provence is a regional, rustic restaurant inspired by the flavors and charm of the South of France. It’s a place where I hope you’ll create memorable moments, enjoy the warmth of our hospitality, and savor dishes close to my heart.
